Your 15-minute game plan

Preheat your oven to 200°C (392°F) right away. Start with the item that takes the longest to cook. While that’s baking, you can assemble the other cold bites. Present everything on a large platter, and keep a couple of ice cubes under the fruits and salmon to maintain freshness.

1. puff pastry rolls with goat cheese, walnuts, and honey (12 minutes in the oven)

Ingredients: 1 sheet of puff pastry, 100 g fresh goat cheese, 50 g walnuts, 2 tablespoons honey.
Preparation: Roll out the pastry. Spread 100 g of goat cheese on it. Sprinkle 50 g of chopped walnuts and drizzle 2 tablespoons of honey over the top. Roll tightly and cut into 1.5 cm sections. Place on a baking sheet and bake for 12 minutes at 200°C. Serve warm, garnished with a few basil leaves.

2. quick toasts with goat cheese, honey, and walnuts

Ingredients: 4 slices of country bread (use 8 if they are small), 100 g fresh goat cheese, honey, 50 g walnuts, olive oil, arugula.
Preparation: Quickly toast the slices. Spread 25 g of goat cheese on each slice, add a drizzle of honey, and top with chopped walnuts. A twist of freshly ground pepper and a drizzle of olive oil finishes it off. Add a few arugula leaves for a touch of freshness.

3. cucumber and smoked salmon verrines

Ingredients for 6 small verrines: 120 g cream cheese, 1/2 cucumber, 100 g smoked salmon, chives, lemon, salt, pepper.
Preparation: Grate the cucumber and lightly squeeze out excess moisture. Mix the cream cheese with the juice of half a lemon, salt, and pepper. In each verrine, layer a spoonful of the cream, a layer of cucumber, and ribbons of smoked salmon. Garnish with freshly chopped chives. Chill for 5 minutes if possible.

4. Mediterranean skewers

Ingredients: 12 cherry tomatoes, 12 mozzarella balls, 12 black olives, basil, olive oil, fleur de sel.
Preparation: On small skewers, alternate cherry tomatoes, mozzarella balls, olives, and basil leaves. Drizzle with olive oil and sprinkle with fleur de sel just before serving. These are ready in just two minutes!

5. toasts with tapenade and sun-dried tomatoes

Ingredients: 4 slices of bread, 1 small jar of black tapenade, 6 sun-dried tomato petals, olive oil, optional seeds (sesame or pumpkin).
Preparation: Lightly toast the bread. Generously spread with tapenade, top with a strip of sun-dried tomato, drizzle with olive oil, and sprinkle with seeds for crunch. Serve immediately.

6. melon and prosciutto bites

Ingredients: 1 Charentais melon, 6 thin slices of prosciutto, toothpicks.
Preparation: Use a melon baller to scoop out 12 balls of melon. Wrap each ball with half a slice of prosciutto and secure with a toothpick. Serve on a bed of ice to keep them fresh and crisp.

7. crackers with cream cheese, radishes, and herbs

Ingredients: 16 plain crackers, 120 g cream cheese, 8 radishes, chives, basil, lemon, fleur de sel.
Preparation: Whip the cream cheese with a squeeze of lemon juice. Spread on each cracker, top with two thin radish slices, and sprinkle with chives and a drizzle of olive oil. Finish with a pinch of fleur de sel to enhance the flavors.

Final tips for looking ultra-prepared

Focus on organization. Bake the rolls while assembling the verrines and skewers. Place sauces and herbs in small bowls for a tidy presentation. A well-arranged platter gives the impression of a carefully curated spread. And most importantly, keep a refreshing drink handy, it makes all the difference.
